So I am not much of a chef, but I do make a mean banana bread! I baked several loaves today mainly for the neighbors although I did keep one for my hungry masses. It was yummy with a cup of decaf this evening. Chris said my banana bread is the best and is that what every wife likes to hear? Here’s the (so easy) recipe…you could probably make it in your sleep! I make it often and whenever I have some old naners that look like they need to go!
3-4 smashed ripe bananas
1/3 cup meltered butter or margarine
1 cup sugar (could be reduced to 3/4 cup, can use splenda if desired)
1 egg beaten
1 teaspoon vanilla
1 teaspoon baking soda
pinch of salt
1 1/2 cup all-purpose flour
No need for a mixer for this recipe! Preheat oven to 350 degrees. with wooden spoon, mix butter into mashed bananas in a large mixing bowl. Mix in sugar, egg, and vanilla. Sprinkle in baking soda and salt and mix this in as well. Add flour last and mix in. Pour mixture into butter 4×8 loaf pan/dish. Bake for one hour. Enjoy the aroma it creates for this hour!!! Cool. Remove from pan and slice to serve. Enjoy!
