Last night, I decided to hit Pinterest to find a recipe for crepes. Pinterest is my go-to place to find anything! I was hoping to make something special to have for a snack on our family night. Since I had purchased strawberries earlier in the day, crepes were a perfect idea! This was the first time I made them and OH MY…they were AWESOME! And super easy. Here is what you will need:
The recipe that I adapted this from is from Persephone Magazine. The original recipe calls for rum as they claim it helps with the flavor and crispiness, but I skipped that ingredient. You can click on the above link and check it out if you wish.
Mix up the flour, milk and vanilla. Then slowly add the milk a little at a time. You will just need to add milk until the consistency of the mixture is thin like heavy whipping creme or a light cheese sauce. It is ready to go!
Put the pan on your burner on medium heat and throw a dallop of butter into the pan. Let it melt. Pick up the pan and swoosh it around it there to be sure it is totally coated. This recipe calls for a lot of swooshing.
Now take a ladle of batter and put it into the pan. Swoosh it around. Now let it cook several minutes…I could tell mine was ready to be flipped when it got brown and crispy around the edges and bubbled in the center. Flip when ready. I like mine a little browned personally.
The first crepe will likely not be a keeper. This turned out pretty yucky. I just gave that one to the dog. The next ones will turn out great. Consider the first one a tester. My dog loved it so test passed!
Don’t go crazy with the batter – you want them light and thin. A little will go a long way – just be sure the pan is fully covered with the batter.
I think it made about 6 crepes for me…if I had done them a little thinner, perhaps I could have squeezed out more.
I filled mine with chocolate chip ice cream, rolled it up, and then topped it will a dusting of powdered sugar, a bunch of strawberries and of course, whipped cream!
It was heavenly!
The beauty of this treat is that you can fill it with whatever you wish and can have it at any meal…can you imagine it filled with Nutella? I want to try this next!
