This recipe is really easy and it makes the perfect breakfast.
I hosted a breakfast for a few friends the other morning and I made this delicious dish.

The best part is that you make it the night before and then all you need to do is pop it into the oven to bake it the day of your breakfast.
That is MY kind of breakfast!
Then I could focus on the other details of getting ready for my guests like cleaning and setting the table.

Blueberry Peach French Toast 3 - EmbracingChangeHere is the recipe…
1 cup packed brown sugar
1/2 cup bitter butter or margarine
2 Tbsp. water1 (29 ounce) can of sliced peaches drained
1 cup blueberries
12 slices of day old French bread (3/4 inch thick)
5 eggs
1 1/2 cups milk
1 Tbsp. vanilla extract
ground cinnamon

Blueberry Peach French Toast 4 - Embracing ChangeIn a saucepan, bring the brown sugar, butter, and water to a boil.
Reduce heat; simmer for about 10 minutes while stirring frequently.
Pour into greased 9 X 13 baking pan.
Top with peaches and blueberries.
Arrange bread over the fruit.
In a bowl, whisk eggs, milk and vanilla; slowly pour this over the bread.
Cover and refrigerate 8 hours or overnight.
Remove from refrigerator 30 minutes before baking.
Sprinkle with cinnamon.
Cover and bake for 350 degrees for 20 minutes.
Uncover and bake 25-30 minutes until the bread is golden brown.
Makes 6-8 servings.
It is yummy!
